2 ounces Quatro Copas Tequila
1 ounce Aperol
.5 ounces chickpea water (the water you get when you strain chickpeas)
1 ounce grapefruit juice
1 ounce simple syrup
1 ounce lemon/lime juice
Shake all ingredients with ice
Strain into a coupe glass
Garnish with three dashes of Angostura Bitters and a sprig of thyme
