Photo: Gerry Barker By GERRY BARKER North Palm Beach Life When you think about where to celebrate Valentine's Day, it's hard to beat the idea of a romantic restaurant fronting the Atlantic Ocean, offering an intimate, carefully curated, six-course dining experience. Welcome to Tula, which opened last May as the signature restaurant at the Armit Ocean Resort on Singer Island. Like the resort itself, the executive chef's special Valentine's menu focuses on dishes that reflect health and well being. North Palm Beach Life got a sneak peek at the menu at at a special media preview event. Romance is in the air from the moment you arrive -- guests will be welcomed with a glass of Moët Champagne, along with a long-stemmed red rose. Each course was selected to represent "the evolution of love nuanced by emotional milestones," starting with "Unknown Together," an artistic amuse bouche of oyster, cocoa and mushroom that started things on a delicious note. Course Two is called "Rouge Éclat” -- a salad that combines beet, whey, pollen, seagrass, frisée (a curly endive), fennel, strawberry, marcona Dukkha (Spanish almonds) and caviar. The name in French describes a brilliant red, inner glow. For the third course, "Depth," guests have the option of Beef Tenderloin with Celery Root, Shallots and Truffle or Poached Halibut with Heirloom Carrots, Sprouts, Garden Vegetables, Seaweed, Petals and Chamomile. Course Four is called “Purity” (Goat Cheese, Honey, Milk), followed by Course Five, "Feeling," offering a "chocolate surprise." And what is Valentine's without chocolate? The final course is aptly named “Dilemma” -- Strawberries, Yaupon Tea and Vanilla. My dilemma was poaching more of it off my mate's plate. Roses, chocolate, softly-lit candles and an ovean view.
