South Beach Cafe Announces New Chef

(Press Release) MIAMI BEACH (February 26, 2025) -- Mango's Tropical Café South Beach, the iconic Ocean Drive landmark known for its vibrant entertainment, announces the appointment of Byron Rubio as executive chef. Chef Rubio will lead the reimagining of the culinary offerings at Mango's, bringing an exciting new era of elevated fine dining to the renowned South Beach venue.

Chef Rubio’s culinary expertise spans decades, having held prestigious roles at world-class restaurants including Prime 112, Capital Grille, Perry’s Steakhouse & Grille, and Nusr-Et Steak House. His extensive experience in crafting exceptional dining experiences and revitalizing iconic brands makes him an ideal leader for Mango’s culinary renaissance. As executive chef, he is committed to serving farm-to-table dishes crafted from the finest, locally-sourced ingredients, all made in-house to elevate every guest's dining experience.

Mango's Tropical Café, a favorite destination for locals and travelers alike, has long been celebrated for its colorful live performances, from fiery flamenco to salsa dancing, for nearly 35 years. Under Chef Rubio's expert leadership, the culinary program is undergoing a transformation to match the venue’s lively, eclectic vibe, offering a freshly conceptualized menu inspired by tropical flavors and Miami's rich culinary heritage.

“I am incredibly excited to join the Mango’s team and contribute to this legendary venue’s next chapter,” said Chef Byron Rubio. “Creating a new menu that highlights tropical flavors while honoring Miami’s culinary roots has been a truly inspiring challenge. It’s a privilege to be part of such an iconic institution and to work alongside a team that shares a vision of celebrating culture and community through exceptional food and unforgettable entertainment.”

The newly conceptualized menu will include a variety of dishes designed to offer guests a refined culinary experience. Appetizer highlights include the Oysters Rockefeller, a luxurious take on a classic favorite, featuring six freshly shucked oysters baked to perfection, topped with a decadent blend of creamed spinach, crispy bacon, and parmesan cheese, all finished with a golden layer of crispy breadcrumbs. For the perfect combination of smoky and sweet, patrons may also opt in for the thick-cut Applewood Smoked
Bacon Steak with Rum Maple Glaze
. 


Entree highlights include the Poached Lobster Tail (12-14oz), delicately poached to preserve its natural sweetness while being infused with sea salt, fresh herbs and drawn butter for a melt-in-your-mouth standout dish for seafood lovers. For steak aficionados, The Ribeye (16 oz) and the Filet Mignon (8 oz), both USDA prime cuts, are the epitome of tenderness, richly marbled, expertly cooked and perfectly seasoned to enhance natural flavors. Alongside the new roster of entrees, guests will find complementary dishes to round off each meal, such as the Scalloped Parmesan Potatoes, Twice-Baked Potato with Shaved Truffles, Creamed Spinach with Crispy Shallots and more.

Mango's South Beach, long known as a staple of Miami’s vibrant cultural scene, is entering a new era that focuses on not only world-class entertainment but also a heightened gastronomic offering.
