Concepted and operated by Wurzak Hotel Group, the relaunch introduces a custom-built LED lighting system, inventive cocktails and mocktails, and a new lineup of weekly programming designed to transform the city’s nightlife skyline. As the sun sets, lighting transitions from warm and ambient to dramatic and immersive, creating a nightlife-forward atmosphere that heightens music moments, signature activations, and peak-hour celebrations. “Sparrow has always been about the feeling you get the moment you step off the elevator,” said Jake Wurzak, Co-CEO of Wurzak Hotel Group. “With this relaunch, we pushed that experience further with stronger flavors, bolder cocktails, dynamic lighting, and programming that gives guests a reason to come back multiple nights a week.” This relaunch follows the brand’s successful expansion into St. Petersburg, Florida, where Sparrow St. Pete opened in January 2025 as the EDGE District’s first rooftop restaurant and lounge. Anchoring the relaunch is the debut of two new signature events, each designed to deliver a refined rooftop experience - Paradise Found on Sundays and Sparkles & Sushi on Thursdays. Expanding its hours to include Sundays, Sparrow launches a marquee weekly event, Paradise Found. Reimagining the weekend wind-down, the rooftop transforms into a sunset sanctuary, inviting guests to escape the Sunday scaries and soak in the final hours of the weekend with soulful house music, a pop-up market and specialty menu items. The DJ and dance floor relocates to the outdoor patio, creating an open-air experience against the backdrop of the sunset. The experience is fueled by playful specials that pair caviar with nostalgic favorites like chicken wings, hot dogs and grilled cheese, alongside boozy gelato and discounted Prosecco bottles and martini towers. A rotating pop-up market will feature South Florida’s small businesses and a partnership with Flagler Village’s Wired Sound Academy will soon host a residency of emerging DJ talent, alongside notable headlining house music DJ’s. On Thursdays, Sparkles & Sushi welcomes Sparrow-ers into the weekend with timeless female anthems, a complimentary glam station, $10 sushi specials, and $10 drink specials for ladies all night. The Sparkle Tower, only available on Thursdays, offers a perfect tower of treats with a Baby Wedge Salad, Caviar Chicken Nuggets, Mai Tai Baba and an Espresso Martini for $25. Happy hour is also offered Thursday, Friday and Saturdays from 5 pm - 7 pm, with discounted $5 sushi rolls, $5 prosecco and $5 well drinks, beers and wines. Sparrow’s new cocktail menu balances playful creativity with elevated technique. New signature cocktails include Porto Spain with Ilegal Mezcal and Giffard Orgeat, the tropical My Kids Love Ibiza with Código Blanco Tequila and apricot, Pepper Plan with Bulleit Rye and hot maple syrup, and the vibrant Tinderella with Weber Ranch Vodka, raspberry, citrus, and botanical notes. The menu is divided into distinct sections: “Cruise Control,” highlighting tropical crowd-pleasers, and “Adventurous,” featuring daring, spirit-forward creations. For groups, Sparrow offers tableside Group Format cocktails, including a brand-new Espresso Martini Tower. Seven new zero-proof cocktails expand the mocktail program, including Sunset Mirage, with Blood Orange, Pineapple, Hibiscus, Lime, Soda and Zen Highball with Jasmine Tea, Yuzu, Honey, Tonic. The beverage lineup is rounded out with local craft beers from Florida’s internationally recognized brewing scene, along with curated wine and bottle service offerings. The rooftop’s food menu continues to offer a refined, Asian-Fusion culinary experience. The updated offerings spotlight elevated small plates, sushi, and shareable mains, including Crispy Rice & Spicy Tuna Tartare, Bang Bang Shrimp Tacos, Korean Fried Chicken Tenders, and indulgent favorites like Lobster Mac & Cheese. The expanded sushi program is a major focal point, featuring signature rolls such as The Dalmar Dragon, Rainbow Roll, and a Maine Lobster Roll. Desserts like Chocolate Lava Cake and the Sparrow Snow Ball provide a decadent finale. With refreshed furnishings, expanded menus, and immersive production, Sparrow reemerges as a fully redefined nightlife destination, seamlessly transitioning from sunset lounging to late-night celebration.
