Set on the narrow Bosphorus Strait connecting the Mediterranean and Black seas, Istanbul transformed the world of the Balkans and eastern Europe as the heart of Byzantium; during its time as capital of the Ottoman Empire, it was the most multicultural city in Europe, with more than a dozen languages spoken on its streets, from Italian to Greek, Arabic and Persian.
