In celebration of National Truffle Day (Sunday, May 2), Lola41, the buzzy globally-inspired bistro inside the White Elephant Hotel, will highlight a few dishes that pay homage to the beloved Italian mushroom. Salmon Carpaccio 4 ounces of thinly sliced salmon topped with chives, pickled daikon, crispy rice balls, ginger vinaigrette and fresh black truffles shavings. Waygu Carpaccio 2 ounces of Waygu Zabuton sliced thin. Served with avocado, smoked soy, puffed wild rice, white soy citrus vinaigrette, truffle aioli and micro cilantro. They call this Denver style cut of meat Zabuton since it is immensely marbled with soft and tender fat. Zabuton is the Japanese word for "little pillow”. Lobster Fusilli 6 ounces of fresh lobster tail sautéed with English spring peas, blistered heirloom cherry tomatoes and garlic and tossed with fusilli pasta, parmesan, chili flakes and arugula.
