![]() (PRESS RELEASE)_BRUNSWICK, MAINE – 05/25/2022 – The Federal, a new boutique hotel in the heart of Brunswick, Maine, announces the opening of 555 north, its chef-driven destination restaurant, now open for dinner. 555 north is a collaboration between The Federal and award-winning Chef Steve Corry and his wife Michelle, proprietors of 555 Portland, which was once among the most distinctive and highly acclaimed restaurants in the city. Paying homage to the local landscape, the menu at 555 north comprises dishes prepared with fresh ingredients from New England’s surrounding farms and waters. Selections will rotate seasonally and focus on Maine’s bountiful seafood as well as classic recipes with a twist and signature favorites. "We are excited for this next chapter for the 555 brand and for the opportunity to bring our menu to locals, hotel guests, and visitors," said Chef Steve Corry. The menu leads with a collection of small plates including the Five Onion Soup drizzled with a chive vinegar and Bangs Island Mussels served with pickled cherry peppers. Noteworthy main courses are the Pepper-Crusted Scallops with a fennel potato purée and carrot vanilla emulsion and the Steak and Fries, prepared from a three-day marinated hanger. Dishes, such as the "Walk in the Woods," intertwining the rich flavors of risotto, sweet peas, fiddeheads, fava beans, and chive blossom, are inspired by local surroundings. Dessert highlights include Buttermilk Lemon Panna Cotta with rhubarb, cherry and vanilla meringue. Pairing perfectly with 555 north’s menu is its seasonal cocktail program. Guests will enjoy selections such as Mill on the Water with Japanese whiskey, plum, lime, and egg white or the Homestead with tequila, Carpano Antica, carrot, coconut, and lime. Signature cocktails include The Federal, the perfect blend of vodka, Burghetti de Vero, Ramazzotti, amaro, and chocolate espresso. An extensive selection of beer and wine is available. Guests of 555 north will delight in the restaurant’s striking interior with a horseshoe-shaped center bar, fireplace, hand-painted murals and lush greenery, complemented by wood and copper accents.
